• 2 tsp mixed berry jam
  • 35 ml Bacardi white rum
  • Juice of one lemon
  • Ginger beer
  • Fresh berries and sprig of mint to garnish
  1. Dollop the jam into a cocktail shaker
  2. Add the rum and stir until dissolved
  3. Add the lemon juice and a large scoop of ice
  4. Shake vigorously.
  5. Strain into a tall glass filled with ice
  6. Top up with ginger beer
  7. Garnish with fresh mixed berries and a sprig of mint
