Ingredients

Buffalo Trace Bourbon

15ml fresh lemon juice

50ml Vanilla and Nectarine syrup

Handful of fresh mint

Schweppes Soda Water

Crushed Ice

Garnish

Fresh mint and a nectarine wedge

Method

Add mint to a tall glass and lightly press with a muddler or spoon to release flavour
Add Whiskey, syrup and lemon juice to the glass and fill with crushed ice
Use a spoon to gently churn the ingredients through the ice
Top with Schweppes soda water
Garnish with fresh mint and a nectarine wedge

Vanilla and Nectarine Syrup

  • 1 cup Brown Sugar
  • Teaspoon of vanilla extract or vanilla powder
  • 1 cup of fresh Nectarine juice – Stone and halve 3-4 fresh nectarines or other stone fruit (peaches, plums or apricots will all work well in this cocktail). Juice by either an electric juicer or by blending and then straining the puree through a sieve. Alternatively, store bought juices can also be substituted.
  • Combine ingredients in a pot and simmer until sugar is dissolved. Strain through a fine sieve again. Store in a clean bottle and keep refrigerated for up to 2 weeks
